Tasty Tuesday (4)
After a fine meal of frozen fish sticks, french fries and mandarin oranges, I realized how much I miss
having a ‘real’ sit down dinner when the hubby is home. Don’t get me wrong, I also love how the boys are perfectly content with “kid food” that doesn’t take up a lot of time.
One of the first meals I will be making when the hubby returns will be Stuffed Pork Loin Roast.
Stuffed Pork Loin Roast
You will need:
4-5 lb Pork Loin Roast
4 Breakfast Sausages, crumbled
1 Cup Bread Crumbs
1 Medium Onion Chopped
2 Tsp. Parsley
1-2 Cloves Garlic Chopped fine
Seasonings of choice rosemary, thyme, sage, salt and pepper
Mix all ingredients except the roast. Cut a spiral into the pork loin allowing you to spread it out flat on a cutting board. Pound lightly to flatten enough to roll. Spread stuffing across entire piece of meat and roll carefully, tying with meat string to secure. Oil well and place in plan for 1 and 1/2 hours 350 degrees, or until done.
Notes: Gravy can be made in the pan when meat is cooked. This is truly a very lovely recipe with ease of preparation.
I like to serve this with mash potatoes and a fresh vegetable that is in season.
